Spillane Seafoods, a family run business, is situated between the beautiful lakes of Killarney and the Atlantic Ocean, where the Salmon is fished.
Salmon are spawned in the pure rivers of Kerry in the Autumn. In the Springtime the young salmon (smolts) go to the sea and return 3 or 4 years later, unerringly finding the exact river where they were spawned. These returning salmon are caught by local fishermen and the smoking process begins.
The salmon is filleted by hand, trimmed, salted and rinsed in spring water
Once prepared the salmon fillets are smoked in a specially designed oven using smoldering oak and finally chilled, pin boned and vacuum sealed, ready for world wide distribution.
This unique process makes Spillane's Killarney Smoked Salmon the most desired of all Irish smoked salmon.
